Beef shank with bone consists of the leg bone and muscle of the beef carcass. It contains beef meat, plenty of connective tissue, and round leg bone packed with incredible bone marrow. The constant use of the shank muscles by the animal makes the beef shank tough, dry, and sinewy.
It’s best prepared when cooked for longer using moist heat methods. Ideal for braising, we recommend using roasted garlic to add a caramelized note and some aromatic veggies for the perfect pairing with the succulent juice of the beef and marrow.
